Leftover Rice n Vegetable Magic...

After every lunch or dinner, some portion of extra food always gets stored in our refrigerator. When we are storing it in the refrigerator we always have a thought that we will use this dinner's leftover rice and vegetables, in lunch tomorrow. But many times it's left like that there only. As next day, we forget to take it out or when we remember about it; we have already prepared the rice and other dishes for lunch.

Yesterday only I was discussing this with one of  my friend and it's then when she shared her leftover rice and vegetable magic, any shape you may like. I tried it out the same day and to my surprise, everyone at home was happy with this new trial.



So, here is the recipe for Leftover Rice n Vegetable Magic.

Ingredients:

  • 2 cup leftover/cooked Rice 
  • 1 cup leftover/cooked Vegetables
  • 2 Big Finely chopped Onion
  • 3 Tbsp Besan
  • 1 Tsp Ghee
  • 2 Tbsp Water
  • 1 Boiled and mashed potato
  • 2 Tbsp Tomato juice (optional)
  • 4/5 Bread slice
  • 3/4 Tbsp Corn Flour
  • 1/4 Tsp Black Pepper
  • 1/2 Tsp Garam Masala
  • 1/2 Red chilli powder
  • 1 and a half Bunch fresh coriander leaves
  • Salt as per your taste
  • Oil for frying 



Method:

  • In a medium sized bowl, mix ghee, leftover rice and vegetables. Mash well and to this add water to make a soft dough like mixture. Keep it aside for 5 minutes.
  • Now to it add chopped onions, mashed potato, soaked and strained bread slices, tomato juice, besan flour, red chilli powder, corn flour, black pepper, salt as per your taste, finely chopped fresh coriander, garam masala and mix all of them nicely.
  • Now divide the above mixture into equal parts and give them the desired shape like a round ball or like a flat tikki kind of shape as liked by you or your family.
  • It's your choice you want to deep fry them or just toss them on hot tawa.
  • Sprinkle some oil on them if trying to make them like tikki or when oil is hot put all the balls in the hot oil and deep fry till golden brown n crisp.
  • Serve hot, with tomato sauce or chutney of your choice.
