Stuffed Tomatoes are very easy to make and gets cooked in no time, if you are expecting guests without prior information. Its very delicious and what I like best about it is that one can make it in just few minutes, like in mornings when we are in real hurry or when sometimes unexpected guests arrive at dinner time.
So, friends here is the recipe for Stuffed Tomatoes...
Ingredients:
- 6 Medium sized Fresh Tomatoes
- 2-3 Fresh Green chillies, finely chopped
- 1/2 cup Finely chopped Onions (optional)
- 1-2 Capsicum chopped
- 1 cup grated Paneer
- 1 Carrot grated or finely chopped
- Few Fresh Corriander leaves, finely chopped
- 1/2 Tsp Coriander powder
- 1/2 Tsp Turmeric powder
- 1/2 Tsp Black Pepper
- 1/2 Red Chilli powder
- 1 Tbsp Oil
- 1/2 Salt as per your taste
Method:
- In a microwave safe bowl, add 1 Tbsp oil, add to it chopped onions, capsicum and carrots. Place it in the microwave at 900W for 3 minutes.
- After 3 minutes take the bowl out of the microwave, to it add grated paneer and chopped coriander leaves. Again keep the bowl in microwave at 900W for 2 minutes.
- Now wash the tomatoes and by making a small hole on the top of the tomato, take out the inner part, in a way that it doesnt break.
- After emptying the tomatoes, carefully fill in the prepared filling and keep it in microwave for 10 minutes.
- When 4 minutes have passed, open the microwave and turn the tomato sides.
- Again keep the tomatoes in microwave for another 5-6 minutes.
- As its ready now, garnish it with finely chopped coriander leaves.
- Serve hot, with any kind of stuffed paratha or simple fresh parathas or rotis.
