Kachori or Dry Masala Kachori is one such Indian snack which is relished by one and all. From kids to grownups, this snack is the favorite request in the evening tea time.

So, here is the recipe, with few of my own additions to it...


Ingredients:


For Dough:
  • 2 cup Maida
  • 1/2 Tsp Baking Powder or Fruit Salt

For Filling:
  • 1 cup Finely powdered Moong Dal
  • 1/2 Tsp Saunf powder (Fennel Powder)
  • 1/4 Tsp Black Pepper
  • 1/4 Red Chillie Powder
  • 1/4 Tsp Garam Masala
  • 1/4 Amchur Powder
  • 1/2 Dhania powder (Coriander Powder)
  • 1/2 Tsp Jeera powder (Cumin Powder)
  • Salt as per your taste
  • Oil for stir frying 





Method:

  • In a large bowl, knead maida and fruit salt to a smooth but not so soft dough.
  • In a separate bowl take moong dal and crush it a little, to it add all the remaining ingredients except the oil.

  • It's time to divide the dough into equal parts and give them a shape similar to small balls with the help of your palm. If needed, you can use a drop of ghee to smoothen them.
  • Now it's time to fill in the balls made. Try shaping the balls in the shape of a small cup or katori and put some already prepared filling mixture in it. Carefully gather all the edges and make them meet at the center and seal and again roll it into a smooth ball.

  • Dust some wheat atta or maida on the ball but only if required and flatten it out a little.
  • Fry till they are crisp and they get golden brown color.
  • Serve hot with green chutney.
