Sweet and Sour Tomato Pickle or Sabzi, is really very easy and gets cooked in no time. Its very delicious and what I like best about it is that one can make it just 5-6 minutes, like in mornings when we are in real hurry.

So, friends here is the recipe for Sweet and Sour Tomato Pickle or Sabzi...
Ingredients:
- 3-4 Fresh Tomatoes, finely chopped
- 2-3 Fresh Green chillies, finely chopped
- Few Fresh Curry leaves, finely chopped
- 1/4 Tsp Mustard seeds
- 1/2 Tsp Coriander powder
- 1/2 Tsp Turmeric powder
- 1/2 Tsp Black Pepper
- 1/2 Red Chilli powder
- 1 Tbsp Oil
- 1/4 Tsp Fine Sugar
- 1/4 Rock Salt or Black Salt
- 1/2 Salt as per your taste
For decoration/garnishing:
- 2 Tsp Fresh coriander leaves, finely chopped
Method:
- Place a pan on fire and heat 1 Tbsp oil in it.
- Now add to it mustard seeds and allow them to splutter.
- To it add green chillies, curry leaves and chopped tomatoes.
- Keep on stirring it for next 2 to 3 minutes, until tomatoes are a little soft.
- Now add the remaining ingredients like red chilli powder, turmeric powder, coriander powder, sugar, rock or black salt and salt.
- Mix them properly and cook this mixture for 3 minutes on medium flame.
- As its ready now, garnish it with finely chopped coriander leaves.
- Serve hot, with any kind of stuffed paratha or simple fresh parathas or rotis.
