So, here is the recipe, with few of my own additions to it...

- 1/2 cup finely chopped Onion (optional)
- 1/2 cup Fine chopped Carrot
- 2 Fine chopped Green chilli
- 1/2 cup Boiled peas
- 1/2 cup Boiled corn kernels
- 1/2 Tsp Sesame seeds
- 1/2 Tsp Red chilli powder
- 1 Tsp Dry Mango Powder
- 1 Tsp Garam Masala
- Salt as per your taste
- Oil for frying
Method:
- In a large bowl mix maida or wheat flour, spinach puree, ghee or butter, salt and water to make a smooth dough. Kneed well for 2/3 minutes. Cover and keep aside for half an hour.
- In a non-stick pan, heat 1 tbsp oil. To it add green chillies, sesame seeds and stir fry for a minute.
- Now add, grated paneer, boiled peas and corn kernels, carrot, onion (optional), red chilli powder, salt and mix well for a minute or so.
- Now add little quantity of water, dry mango powder, mixing well, cook for 3/4 minutes on low flame.
- Its time to divide the dough into equal parts and give them a shape similar to small balls with the help of your palm. If needed you can use a drop of ghee to smoothen them.
- Roll them out as you do for normal roti's.
- Now take a sharp knife and divide the roti in two parts.
- Give it a cone shape and fill in 1 spoon mixture already made and seal the ends, final shape should be like as shown in the picture below.
- Fill out other rolled rotis in the same way as above.
- Now deep fry all the filled samosa in hot oil till golden brown.
- Serve hot with tomato sauce or chutney of your choice.
