Arbi Masala in Microwave...

Arbi Masala

Arbi, earlier the name itself used to turn me off from this yummy vegetable. Arbi is also known as Colocassia. But this sophisticated name too dint change anything.

But since I found this "Arbi Masala" recipe, I am all for it.

This positive change in my feelings towards Arbi, made me create this post for my friends who also earlier used to avoid trying out "Arbi".

So, friends here is the recipe of Arbi Masala...

Ingredients:

  • 500 gms boiled and peeled Arbi or Colocassia
  • 1 Tbsp Ginger/Adrak fine paste
  • 1 and a half cup of fresh tomato puree
  • 12-15 Cashew nuts fine paste
  • 1 tsp Ajwain/ Carom Seeds
  • 1 tsp Garam Masala
  • 1/2 tsp Haldi/Turmeric Powder
  • 1 Tbsp cooking oil or Ghee
  • 1/2 tsp Salt or as per your taste

For decoration/garnishing:

  • Fresh- chopped mint leaves or coriander leaves/dhania patti  to garnish
  • 1 Fresh green chilli for garnish


Method:

  • Mix the tomato puree, cashewnut paste, ginger paste, garam masala, ajwain, haldi and oil in a microwave safe round bowl. Keep it in the microwave at high temperature for around 3 minutes.
  • After 3 minutes, to it add half cup of fresh water, salt as per your taste, arbi and mix for a minute or till all arbi gets fully coated in the above grinded tomato paste. Keep it in the microwave again at high temperature for around 7 to 8 minutes.
  • After 8 minutes, take the bowl out of the microwave, garnish the dish with freshly chopped mint leaves or coriander leaves and freshly and finely chopped green chillies.
