Marwari Tikadia...

This recipe is about an Indian fully vegetarian marwari dish, which I learnt very recently from my marwari friend. In this dish, rotis or tortillas are made by stuffing masaledar pappads.

So, here is the recipe with self taken pics to help everyone understand it better...

Ingredients:

  • wheat atta dough - kneaded with salt and water
  • 5 pappad of your choice
  • 3 Finely chopped onion
  • 2 Finely chopped tomatoes
  • 1 tsp roasted cumin seeds (zeera)
  • 5 Finely chopped green chilies
  • 1 tsp red chilli powder
  • salt to taste
  • 4 tbsp+ Ghee
  • fresh mint leaves to garnish


Method:

  • Roast all the pappads one by one directly on flame or you can do this in microwave too. By setting the microwave at 900 degrees temp for 1 minute till crisp. Then crush them by hand in a dry bowl. Add chopped onions, tomatoes, green chillies, cumin seeds, red chilli powder, salt as per your taste and 1 tbsp ghee. Mix all the ingredients nicely and keep aside.

Filling mixture

  • Now on  the flame and heat a non stick tawa.
  • Its time to divide the dough into equal parts and give them a shape similar to small balls with the help of your palm. If needed you can use a drop of ghee to smoothen them.
  • Now its time to fill in the balls made. Try shaping the balls in the shape of a small cup or katori and put some already prepared filling mixture in it. Carefully gather all the edges and make them meet at the center and seal and again roll it into a smooth ball.

  • Dust some wheat atta on the ball and flatten it out. 
  • By now the non stick tawa must have become quiet hot to place these rolled out tikadia's on it. Drop some ghee when it gets little brown spots on one side and do the same for both sides.

  • Cook till they are crisp and get golden brown color.
  • Carefully cut them into wedges, serve with the remaining pappad filling or fresh yoghurt, last but not the least garnish with fresh mint leaves to add color.
